The Best Pound Cake Ever.....!!

 As the oldest child of 5 kids we did not have alot of money, so pound cake was usually our desert of choice. So, I have made alot of pound cakes...lol And this one is the best one ever....This is truly the last pound cake recipe you will ever need...  :-)

Items Needed :
1c. or REAL butter
2c. sugar
6 eggs
3c. all-purpose flour (sifted)
1/4 ts. baking soda
8oz. sour cream
1 ts. vanilla

preheat oven to 300 degrees, cook for 1 1/2 hrs. Let cake rest in pan for 15 mins then remove. Enjoy!

Helpful Hints
1. make sure the butter is room temp, cream the butter and sugar together
2. add eggs 2 at a time, combining them well before adding the next 2.
3. add the baking soda and vanilla. mix well
4.add 1c. flour mix well, add another cup of flour and the sour cream mix well, add the last cup of flour and mix well
5. I cook my cake at 325 degrees for 1hr 20mins....not sure if this has to do w/ climate or not, but that is why I put the temp and time that the recipe called for.....ENJOY!!!

Easiest Blueberry Muffins Ever!!

This recipe is very easy and very addictive.....it's also freezer friendly... Enjoy!

Items Needed:
1-- Box of Angel food cake mix
1--can of Blueberry Pie filling

Mix items together....Bake at 350 degrees for 15 mins (or until golden brown)....thats it!!

Helpful hints:
The batter will rise alot...don't worry this is normal. As the muffins cool they will shrink(also normal)
Fill muffin tin almost to the top... Enjoy!

Yummy Mexi-Casserole

This recipe I love. It is a crowd pleaser easy to assemble and feeds many. As most of the recipeis I will post u can add or omit what u like or don't like. Add a salid or use as a dip w/ some tortilla chips and salsa..Yummy!
Items needed:
1lb- ground beef
3- cans refried beans
2- cans corn
1- lg cottage cheese
1 1/2- lg pk of shredded mexi cheese
1 1/2- pk taco seasoning
24 corn tortilla
1- lg can black olives (optional)
green onions (optional)

 Helpful Hints:
cook your ground beef, then add taco seasoning. In a 9x13 pan start layering.
1. layer on 1/2 of taco meat and olives (optional) then add 6 corn tortilla cover the whole pan
2. add 1&1/2 can refried beans. (spread all over the layer of corn tortillas) add 1/2 pk of shredded cheese, and 6 corn tortilla
3. pour and spread the container of cottage cheese over the tortillas, and then add the corn. add 6 more tortillas
4. repeat step 2
5. add the remaining taco meat and olives
Cover pan with aluminom foil
Bake at 400 degrees for 25-30mins, take off foil add the remaining amount of cheese and olives. Bake for another 10 mins. until golden brown. take out of oven add some chopped green onions on top.... ENJOY!!
(This also freezes well)

Spinach, mushroom Breakfast Quiche....

     This breakfast item is easy quick and can be frozen for future use. You can also add or take away items to make to your liking. It's up to you....enjoy!!

Items needed:
12-- eggs
2c.-- fresh chopped spiniach
1--can of mushrooms
1---can of sliced black olives
1/2c.----cheedar cheese (shredded)
2 tsp----ground mustard
2tsp---onion powder
salt and pepper--to taste

 Beat eggs add the rest af the ingredients....bake at 350 degrees for 20mins until the top is golden brown
Helpful Hints: I make mine in a muffin tin...spray pan well...will make 12...fill to the top ....they rise, but will fall as they cool. Don't be afraid to add or omit the veggies or seasonings to your liking....have fun with this
